So, it is a lazy Sunday, and as I sit here watching the rain fall outside I am finding myself eagerly anticipating spring…And everything that comes with it. It’s my favorite season of the year, and noting says spring like citrus! For this recipe, I usually use lemons, but decided to change it up a bit and use oranges.
These soft orange cookies taste delicious and a have a soft, cake-like texture. They’re sweetly scented with fresh orange zest and a sweet citrus icing. They are fairly easy to whip up, and are an excellent dessert to serve with tea. Enjoy!
Orange Cream Cookies
Prep Time: 30 min
Ingredients for Cookie Dough
1C Shortening or 1 stick butter shortening
2 Cups Sugar
1c Sour Cream
1t Baking Soda
1 table spoon baking powder
½ Orange Juice
1/4 cup margarine or butter, melted
2 cups powdered sugar
1 t grated orange peel
3 tablespoons orange juice
Mix sugar and shortening well.
Add eggs, sour cream and orange juice and mix again.
Add the dry ingredients. Mix until blended.
Refrigerate for 30 minutes before baking
You can substitute regular flour for gluten free flour
In this recipe I also used coconut sugar instead of regular sugar.
Drop into spoonfuls onto greased baking sheet.
Bake at 350 for 12 – 15 minutes
Allow to cool before glazing with icing.
